We are big Dr. Suess fans around our house! His books have been in our bedtime story rotation from early on and make an appearance at least once a week, but often more. I am also so very excited to see Roo starting to read some of the more simple Dr. Suess books all on his own! Talk about a proud Mama moment!
So I couldn’t let the fabulous author’s birthday slip by this weekend without some kind of celebration in honor of it! I made a Dr. Suess Muffin Tin Meal for the kiddos. They were so excited to guess at what everything was from! Here’s our Dr. Suess muffin tin meal:
In this meal: Green eggs and Ham; One Fish, Two Fish; Thing 1 cupcake; Cat in the Hat hats
This was actually a pretty easy meal to throw together. I made the cupcakes the night before and they were fairly simple to decorate as Thing 1 and Thing 2. The boys laughed at the frosting version of crazy blue hair!
The green eggs and ham were also simple. I hard boiled the eggs the night before, then just scooped out the yolk and mixed with some mayo. I don’t add the mustard for the kiddos, and added a drop or two of green food coloring. The ham came in the cute little circles – new product!
The Cat in the Hat hats were simply sliced strawberries and bananas on toothpicks.
This was another meal where I think every last bite was eaten! Monkey said he didn’t want his eggs, but I noticed he did end up eating them after all!
