
Coconut Chicken

Last week I asked the boys for help in planning out the meals for the week. Monkey suggested chicken. When asked what kind of chicken he wanted, he replied, “The kind we eat.”
So I went to Pinterest in search of a good chicken recipe to try. I found two for coconut chicken. I liked parts of both of them, but didn’t completely like either one. So I pulled what I liked out of each and made up my own. The two recipes I used for inspiration are this one and this one. Everyone loved these and thought they were just like ones you would find in a restaurant.
Coconut Chicken Strips
1 pound chicken tenderloin strips
2 eggs
1 cup panko breadcrumbs
1 cup coconut
1/2 teaspoon salt
1/4 teaspoon pepper
Sauce:
1 cup apricot preserves
2 Tablespoons honey dijon mustard
Preheat oven to 400 degrees. Mix breadcrumbs, coconut, salt, and pepper. Whisk eggs. Dredge chciken tenderloins through egg, then coat with breadcrumb/coconut mixture. Place in baking dish. Bake at 400 degrees for 25 minutes, or until the chicken is done and the coconut starts to look crispy and slightly browned. While the chicken is baking, mix the apricot preserves and honey dijon mustard for the dipping sauce.

- Cream of Wheat or oatmeal
- Toast or English Muffins
Lunches
- Roo: Monday – Lunchable; Tuesday – Sandwich; Wednesday, Thursday, and Friday – School lunch
- Monkey: Monday – Lunchable; Tuesday – Sandwich; Wednesday – Mac & Cheese; Thursday – Mama Lunch; Friday – SpaghettiO’s
- Me: Monday – leftovers; Tuesday – Sandwich; Wednesday – Mac & Cheese; Thursday – Sandwich; Friday – SpaghettiO’s
Dinners
- Monday – Grilled pork chops, rice, honey glazed carrots
- Tuesday – Meatloaf, mashed potatoes, green beans
- Wednesday – No youth night at church this week – the kids win, McDonald’s
- Thursday – Valentine Dinner! Heart shaped make-your-own pizzas, salad
- Friday – Brocolli Cheese Soup, sandwiches
- Saturday – Rotisserie Chicken, mac & cheese, mixed veggies
- Sunday – Beef stroganoff with egg noodles, salad

I just made a super yummy recipe from my favorite Paleo cookbook. I’ve made it before and Hubs has loved it each time. It’s called Puerto Rican Beef. 1 pound ground beef,
1/2 each green, red and yellow bell pepper sliced
1 white onion sliced
3 TBS EVOO
1/2 TBSP ground cumin
1 tsp ground coriander
1/2 TBSP turmeric powder
1TBSP dried oregano
sea salt and black pepper to taste
1 bunch kale, chopped
1/2 cup piminto-stuffed green olives (we did jalapeno stuffed this time- sooo good!)
3 sweet potatoes
1 ripe avocado
brown ground beef
add bell peppers, onions and OO until tender
add all spices and mix well
add kale and green lives; continue cooking, stirring often until kale is tender
serve over mashed sweet potatoes with a side of sliced avo
*I don’t do the sweet potatoes only becasue I am super full just from the beef. Also, I’m doing a sweet potato bar for Thursday night’s dinner.

He said it was like something he saw on Diners, Drive-Ins, and Dives. My little Monkey also loves olives and avocado, so this one just might be a keeper at our house!! Thanks for sharing it Vicky!!
Oh! And I am no where near the muffin tin expert you are but I make these great “egg cupcakes” each week. The recipe makes 24 and a serving size is 2 so there’s a whole week’s worth plus a few snacks for me and hubs. Not nearly as cute and pretty as your muffin tin masterpieces, but i like that breakfast is a no brainer!
