Not much of a theme this week. I had planned on doing a football or Super Bowl theme, but time just got away from me! (You can check out my previous football themed Muffin Tin Meal here.) It was our annual winter festival in our town and we have an annual tradition of getting a sitter and heading downtown with our good friends for tastings at the chili cook-off. They hold both an amateur and a professional one. For the professional one we walk from restaurant to restaurant downtown and try tastes of chili and also enjoy some nice drink specials! I was a little lazy in the morning so was rushing around a little to get lunch together for the kiddos before we left.
So I used the fun new silicone, heart shaped, round muffin tins I found in the dollar spot area at Target. The kids didn’t seem to mind the lack of a theme and they were excited to introduce their buddy to Muffin Tin Meals! Here’s our lunch from Saturday:
This simple muffin tin includes: PB&J sandwiches cut into circles, grape tomatoes, a heart shaped brownie, grapes, and BBQ chips. It was pretty well eaten by all and pretty quick for Mama to throw together!

I love that muffin tin! What a great way to get kids to eat a variety of yummy, healthy foods! I need to get some!
Thanks Alexa! I find my kids do eat better and are more willing to try new things if I serve them up in a muffin tin. Whatever works to get them started with healthy habits!
I have what probably seems like a dumb question- What’s your philosophy or rule about seconds? Do they have to finish all the muffin tin sections before they get a refill?

Hi Vicky! Certainly not a dumb question! Our general rule of thumb with food at our house is they have to take a “no thank you” bite of everything. Which gets them to at least try it. Then after that I am usually fine with seconds on anything, for the most part. Like they can have seconds on fruits and veggies at any point. If they want seconds of something like chips or crackers, I try to get them to eat at least half of their protein and fruit or veggie first, especially if it is something I know they like. And my two kids have different tastes, so they sometimes do some swapping when they are getting close to being done. Like one will say he’s done, and the other will ask if he can have the rest of the apples or cheese. Hope that helps!
Totally helps! Thank you! I always feel like a jerk saying they can’t have seconds until they finish everything. But finishing some of everything is a great idea!
